Background: Beta Lactoglobulin B

Beta-lactoglobulin is the major whey protein found in cow's milk and is also present in many other mammalian species; one known exception being humans. The function of beta-lactoglobulin is not clearly defined, although it is known to bind to several hydrophobic molecules, suggesting a role in their transport.
